Clave de Tábula

Grape Varieties: Tempranillo 100%. Morejona Estate, planted in 1959. 830 m. 

Type of soil: Sandy clay-upon calcareous

Yield: 1500kg./ha. (11 hl/ha)

Age of the vineyard: 58 years.

Harvest: Hand-picked in 15 kg crates, taken by refrigerated trucks to the winery.

Wine-making: The bunches are sorted on a sorting table. After de-stemming, the berries are sorted on a second sorting table. A cold soak of 4 days. Alcoholic fermentation in French oak vats. Malo-lactic fermentation in new French oak barrels. 

Ageing: 12-14 months in French oak barrels and 6 months in a French oak foudre.

Type of wine: Premium

Bottle sizes: 75cl and 150cl

Tasting notes: Bright cherry, high layer. Fruit expression typical of the tempranillo grapes, fresh red fruit,toasty, mineral. Powerful, very fresh, full, round tannins, fleshy and toasty. It shows elegance and finesse that makes Clave de Tábula something different.
